Introducing Tenuta San Carlo’s Natural Rice

from our land to your plate

When you try our rice, you can taste the flavors of Maremma.

Located in the floodplain of the Ombrone River, our farm is immersed in Tuscany’s most natural and uncontaminated landscapes.

To produce the highest quality rice, we listen to the land and work with nature – instead of against it.

From the preparation of the land, to the selection of seed and the timing of the harvest, we follow a sustainability ethic and pay close attention to detail at every step in the process.

how we grow our rice

The way we farm reflects the environment that surrounds us.

We follow nature’s lead to grow food that we feel good about eating with our family, friends, and community.

In October 2015, we started the multi-year transition to certified organic production.

We follow strict organic regulations and do not use chemical herbicides, pesticides, or fungicides to grow our rice.

Instead, we start preparing the fields months before planting to naturally fend off weeds and other potential obstacles to a healthy harvest. We use cover crops and crop rotation to improve soil quality and fertility.

how we process our rice

We process our rice with the same attention to detail that we apply to production.

It took considerable time and effort to find a rice processing facility that held to our sustainable farming principles and high quality standards. Our search led us to partner with the Riseria Rizzotti of Novara.

Rizzotti uses an artisanal stone processing method, perfected over many years. This process results in whole and uniform rice kernels that maintain their quality during cooking.

how to cook our rice

We grow two types of Italian rice: Carnaroli rice and Ribe rice.

Our Carnaroli rice is the classic Italian variety for making risotto. Favored by Italians for making risotto, Carnaroli rice becomes creamy while remaining al dente. For the best quality risotto, follow the steps in our Procini Mushroom Risotto recipe (even with other ingredients!). Our Carnaroli rice cooks in about 18-20 minutes. 

Our Ribe rice is an Italian variety recognized for its versatility that grows well in our soils. Due to its size, kernel hardness, and starch content, it can be used for a variety of dishes – including rice pilafs, rice salads, and soups. It cooks in approximately 15-17 minutes.
